This week I decided to try her Creamy Green Chile Chicken Enchiladas recipe since I've been craving enchiladas lately and boy, were they absolutely SCRUMPTIOUS! Thanks Flygal! (Hope you don't mind my nickname for you, Ashley!!)

Here is the Croque Monsieur I made:
They were ok, but not as good as they are at La Madeleine. I think I should have used better bread for it.
Next, I'd really like to try FlyGal's Chinese Style Tilapia. My mom and sister are vegetarians, or fishatarians, so I'm thinking I might make it while they're here next week-end.

i think the bread means everything in recipes like croque monsieur. definitely go all out on the bread!
i haven't been cooking much lately since life has been so hectic. i need to get back in the kitchen!
